Automation and quality control in all processes

Daily milk collection

Every day we collect fresh milk from carefully selected local farms. This proximity allows us to control quality from the source, ensuring freshness, traceability, and respect for animal welfare. It is the first step to achieving cheese that tastes like the countryside… Authentic flavor.

Pasteurization

The freshly collected milk undergoes a gentle, precisely controlled pasteurization process. This heat treatment eliminates potential bacteria without altering the milk’s natural properties. In this way, we preserve the authentic flavor and ensure a safe, balanced, and nuanced cheese.

Coagulation and cutting

After receiving the milk, it is gently heated and natural rennet is added to start the magic: coagulation. Once solidified, it is cut into precise grains that release whey, preparing the curd to become cheese with texture, character… and plenty of flavor.

Molding

After coagulation and cutting, the curd is placed into specific molds that shape and texture the cheese. This process, carried out with precision and care, defines its characteristic appearance and ensures each piece maintains its consistency, compactness, and the artisanal seal that represents us.

Pressing

After molding, each cheese undergoes a careful pressing process that removes excess whey and gives the piece a firm, compact shape. We apply just the right amount of pressure, for the necessary time, to ensure a balanced texture and an impeccable final result.

Unmolding

Once pressed, our cheeses go through an automatic unmolding system that speeds up the process without compromising the product’s integrity. Thanks to this technology, we maintain the perfect shape of each piece and optimize time without losing the artisanal touch that defines us.

Salting

After molding, our cheeses are immersed in brine for just the right amount of time. This natural process regulates moisture, enhances flavor, and helps preserve the cheese without altering its essence. It is a salt bath that brings out the best in every piece.

Drying and aging

Our cheeses rest in aging rooms where time, temperature, and humidity are precisely controlled. Here, they slowly develop their texture, aroma, and character. We do not rush the process; we let each piece mature at its own pace, as has always been done.
